You could use Carbon Copy Cloner to create bootable backups of your Mac. you cannot use them as a recovery startup disk. I really bought it for Photos because of the larger screen and to optimise storage on my (much faster) MacBook so I can synchronise the whole library to the iMac and then back it up (for most other things I am happy to use the MacBook). I understand that the root of the problem is the slow spinning 5400 rpm disk, confirmed by EtreCheckPro which says "The hard drive in this computer is too slow." (report attached below). I'm guessing that this is because it switched to using APFS for the system disk.
